A finger food that’s packed full of goodness
Why it’s good for you:
- Tuna is full of protein and omega-3 fatty acids
- Vegetables are loaded with vitamins
What you need:
- 1 packet of rice paper sheets
- 2 tins of tuna in spring water
- 2 tbs low fat mayonnaise
- 1 spring onion, finely chopped
- 1 carrot, grated
- 1 cucumber, finely sliced
- 60g baby spinach
Instructions:
- Mix tuna, mayonnaise and spring onion in a bowl
- Dip 1 rice paper sheet in a bowl of water for 30 seconds until soft, then drain on paper towel
- Place the tuna mix and vegetables in the centre of the rice paper
- To roll, fold in ends and roll tightly
- Repeat until you have used all of the rice paper
