Forget boring old beans … this somewhat fancy take on an old favourite will ensure rumbling tummies are a thing of the past!
Why they’re good for you:
- Beans are a type of legume, which means they are full of protein and fibre to help your child’s tummy stay full and healthy
- Tomatoes are rich in antioxidants
- A variety of coloured vegetables means a variety of vitamins! Try mixing up different colours of capsicum and onion
What you need:
- 1 tbs olive oil
- 1 onion, sliced
- 1 red onion, sliced
- ½ red, green or yellow capsicum, sliced thinly
- 2 tbs balsamic vinegar
- 3 tins baked beans, red kidney beans or 4 bean mix (salt reduced or no added salt)
- 1 can crushed tomatoes or passata
- 3 tsp ground cumin
- 3 tsp paprika
- 3 tsp mixed dried Italian herbs
- Dried chilli (if desired)
Instructions:
- Heat olive oil in a non-stick frypan over medium heat. Add onion, red onion and capsicum and stir for 5 minutes, or until translucent. Add balsamic vinegar and simmer for a further 5 minutes, or until sticky.
- Drain the baked beans/red kidney beans/4 bean mix in a colander removing all the juice (this removes any excess sugar and salt that might be in the juice). Add the beans and the tomatoes to the pan and bring to the boil, then reduce the heat to a simmer.
- Add the cumin, paprika, Italian herbs and dried chilli (if desired). Simmer for a further 5 minutes.
- Serve immediately or refrigerate for later use.
